Bucatini carbonara: soft-boiled eggs, guanciale crisps, young parmesan (can't find pecorino!), kampot black pepper, and a possibly heretical addition - onions softened in guanciale oil. The onion adds sweetness and lightens a traditional carbonara IMO. Let's see how many hate comments I get...
