Strawberry season called me to make my first pie dough and first galette 🍓

What about it?

I used Jeremy Schek’s [pie dough recipe](https://scheckeats.com/asb-basics-pate-brisee-pie-dough/) and followed the method (not the filling) of his [blueberry galette recipe](https://scheckeats.com/blueberry-galette/). Now, I’ve never made pie dough before but I think this would be hard to beat. The faux-lamination gives the entire crust an amazing flake, even along the bottom. For the filling: ~400g strawberries, quartered - 1 tbsp of balsamic vinegar - 1 tbsp of cornstarch - 1 tbsp of white sugar - dash of vanilla extract Mix the above together and cook in a skillet on medium low for 10-15 mins until thickened. Then add into the galette and bake. I precooked it so that the filling was less liquidy in hopes of avoiding a soggy-bottomed pie. It worked!
