This 6” cake took 7 hours to make and has me questioning all my baking abilities. Would love your advice on helping me improve

What about it?

The cake on the left was the inspiration that I was requested to copy. Right cake is what I made. It’s 3 layers of chocolate sponge with Nutella cream filling and vanilla Swiss meringue buttercream on the outside. The customer was in love to a point where she cried, which makes my heart so happy that I was able to bring joy to someone, but the self criticism is solid. Here are all the issues I faced. Please share your thoughts on how I can improve. 1. I didn’t do a good job releasing the cake from the pan so 2 of the layers were shorter in diameter than the third - I know how to fix this in the future and this only happened to me once so maybe I just was rushing or something but next time I’ll use an offset spatula, tilt the cake pan a bit and then scrape along the inside perimeter of the pan. I piped extra buttercream around the smaller layers to make it the same diameter as the largest layer. It was just very frustrating to try and fix 2. I miscalculated the amount of frosting I’d need to cover the outside and was scraping bits to get enough to cover. I made Swiss meringue buttercream using an entire box of butter (4 sticks) and 5 egg whites. I took out some to keep on the side for the frogs and the piping decorations. What Is this amount of butter/eggs to cover a 6” cake? 3. I was trying to cover the cake in a single coat to avoid having to do a crumb coat and a final coat since I had limited purple frosting. So when trying to cover it, the crumbs were getting stuck in the buttercream and peeking through. I was able to cover them with the fondant lilly pads. However lesson learned was to first refrigerate the cake layers and then do a crumb coat and a final coat. Would love your suggestions to avoid doing 2 coats. 4. When I was piping the green border around the Lilly pads, my hands were melting the buttercream. How do I avoid this? 5. The Lilly pads on the left photo were made from buttercream but I didn’t know how to it so I made mine from fondant. How do i create them from buttercream? 6. What is the ideal piping tip to create the smooth finish of the buttercream frogs on the left photo? I used a #12 Wilton tip, but it created a ripple effect on the body and head of the frogs 7. What type of frosting should be used to create facial expressions like the black smile? I used a pre-made gel but it started to drip after piping 8. I used Wilton fondant to create the stethoscope, injection, and thermometer, but it started to melt after cooling in the fridge overnight. How should fondant decorations be handled? I have refrigerated them in the past and haven’t had moisture issues. 9. Is 7 hours too long to make a cake like this? It has so many little components (cake sponge, multiple colored buttercreams, fondant, different piping techniques, switching between different piping tips). I want to become a more efficient baker, but I just don’t know how to do it. I have made some very complex cakes for example a cake shaped like car that took me a week to make, but for some reason this particular cake took way longer than I expected it to.
