Madagascar vanilla burnt cheesecake: St Agur (blue) cheese + Idiazabal (hard sheep's) cheese (special technique applied to avoid dryness!) + <redacted> + <redacted also>. Fourth iteration and I finally got the recipe right! The punchiness of the blue gives it character.
