TOTK Forced update to 1.2.1, even with automatic updates off?

Ever since accidentally updating to 1.2.0, I have turned off automatic updates, and could always start the game anyway when prompted to update. A couple days ago I was no longer able to force-start the game, even after a system reboot. The switch was always online. Any thoughts or solutions?
