New to baking, this is my second loaf

While following Julia Child's uncovered pain de mie recipe I decided to give it an egg wash before baking. Maybe that's why it didn't rise as it baked? Still pretty tasty.

I’m trying to make carrot cake and I’ve used this recipe before and it turned out great last time. This time however I used baking strips for the first time but I’m not sure if this happened because of them. The outside of the cake is very moist and soft but the center is dry and crackly.
