German chocolate cupcakes

What about it?

I’m visiting a friend and her partner loves German chocolate cake. Whipped up these cute babies this morning. Also made some plain chocolate cupcakes too for those who don’t love coconut. The cupcakes are all filled with some frosting too, because what else am I do to with extra frosting? Hope you enjoy my attempt at decorating :/

What about it?

Hi! I followed a recipe, after 20 minutes at 400 degrees F (recipe said 200 celsius which is 392 F so I did 400 bc my oven temp goes my knob). After it was pale after that time, I tried turning the heat up to 450 for 10 more minutes. Also, when dimpling the dough before baking, my dough was stickyish. I’m not sure why or what causes that.

My fifth annual jumbo pop tart. 🙂 Frosting and filling from [Sally’s Baking Addiction](https://sallysbakingaddiction.com/homemade-frosted-brown-sugar-cinnamon-pop-tarts/). Crust is NYT Cooking’s all-butter pie crust.

Strawberry season called me to make my first pie dough and first galette 🍓

What about it?

I used Jeremy Schek’s [pie dough recipe](https://scheckeats.com/asb-basics-pate-brisee-pie-dough/) and followed the method (not the filling) of his [blueberry galette recipe](https://scheckeats.com/blueberry-galette/). Now, I’ve never made pie dough before but I think this would be hard to beat. The faux-lamination gives the entire crust an amazing flake, even along the bottom. For the filling: ~400g strawberries, quartered - 1 tbsp of balsamic vinegar - 1 tbsp of cornstarch - 1 tbsp of white sugar - dash of vanilla extract Mix the above together and cook in a skillet on medium low for 10-15 mins until thickened. Then add into the galette and bake. I precooked it so that the filling was less liquidy in hopes of avoiding a soggy-bottomed pie. It worked!

Graham-pretzel-peanut crust, chocolate pastry cream and bananas, topped with peanut butter cream 🤌
