What about it?

I am quite proud of what I made, and just wanted to share it here really. Tips are always welcome. Glazed Duck Breast with glazed carrots, vegetable crisps and a mushroom purée. Tastes even better than it looks!

Albacore appetizer

What about it?

In today's fun with Albacore, I made some sous vide Oregon albacore. Then mashed it and mixed it with salt and pepper, kewpie mayo, seasoned rice vinegar, toasted sesame oil and toasted sesame. Baked some wonton chips, made some quick pickled ginger mince, shredded some radish then mixed in some dried chilis and paprika. Sliced some, scallions and cukes too. Assembled all as you now see here.
