Ice Cream Sandwich Help

What about it?

I recently made carrot cake ice cream sandwiches using [this](https://basicswithbabish.co/basicsepisodes/ice-cream-sandwiches) Basics with Babbish recipe. I love the texture of this cake and would like to use the base of this recipe to make a vanilla cake with strawberry ice cream. What can I replace the carrots with? I'm considering using applesauce, buttermilk, or milk, but I'm not sure which one to use. Any thoughts?
