Please help. I moved my knight to e6 but it is considered that taking it is the best move, even thought I then win a queen. Is there an explanation behind it ?

I am at around 550 elo. And I win most of the matches by resignation. It feels bad not doing a mate. Why does everyone keep resigning? (it's after taking their queen most if the times)
