I made red velvet cupcakes with cream cheese and nutella frosting. They taste great but sweet and creamy throughout..kinda boring. Any ideas what other flavours I can use or add to make it more interesting?

Custard doesn't have any bubbles but for some reason the filling is separating from the pastry? Has anyone experienced this before?
