So why does taking a pawn better than not to (thinking of the future of the game)

Like I get that it gives me a better material advantage but I’m gonna be castling king side later so why would letting the rook on the offensive be better than not to?

Just wanted to share I’ve finally hit 1300 after few on and off spurts of playing! Very happy I’ve finally hit it!
