Italian Orzo and Spinach Soup: Spinach, Orzo, carrot, celery, fire-roasted tomatoes. (I also added some crumbled Italian sausage and threw in some other pasta shapes that I had on hand and wanted to use up!) Garnished with a handful of fresh-grated Parmesan.
