What are my options here?

I’m going to inlay another piece of wood but I’m concerned with trapping air in this. I just added some starbond but should I completely fill the void?

Ash, Walnut Cutting board from scraps

This turned out great after adding a walnut slice to hide a mistake!

Gel stain over unfinished AND unfinished wood? New to wood working - top was terrible but rest was in pretty good condition so I just used a random orbital on the top and sanded the damaged down on other parts. Will the stain be very different? Should I sand it all down?
